Egg Roll in a Bowl


This quick (15 mins!) and delicious recipe is packed with protein and is carb friendly. It tastes just like an egg roll, but without the wrapper!


Ingredients

  • 1 lb ground pork or beef

  • 1 teaspoon minced garlic

  • 14 ounces shredded cabbage or coleslaw mix

  • 1/4 cup low-sodium soy sauce (or liquid aminos)

  • 1 teaspoon ground ginger

  • 2 teaspoons sriracha (or less depending on your heat tolerance!)

  • 1 whole egg, beaten

  • 1 tablespoon sesame oil

  • 2 tablespoons sliced greeen onions

Instructions

In a large skillet, brown the pork or beef until no longer pink. Drain any liquid from the pan after browning, if desired. Add the garlic and saute for 30 seconds. Add the cabbage/coleslaw, soy sauce and ginger and saute until the cabbage wilts down (about 3 minutes.) Make a well in the center of the skillet by pushing the meat and cabbage mixture to the sides of your skillet. Add the beaten egg to the skillet and scramble until cooked through. Stir in sriracha. Drizzle with sesame oil and top with sliced green onion. Makes 4 servings.
